To make this delicious vegan summer salad start by cooking the quinoa. I just follow the instructions on the package for the amount of water. While the quinoa is cooking slice the cucumber. tomato and avocado.
When the quinoa is cooked you can let it cool if it is a warm day. But if you are impatient you can also use the quinoa while it is still warm. Put the quinoa, cucumber, tomato, avocado, and chickpeas in a bowl.
For some extra flavor I’ve made a very simple lemon vinaigrette dressing. Just mix the garlic, olive oil, and lemon juice in a bowl and add salt and pepper to taste.
Add as many as you like to the bowl and mix until combined well. And taste to see if you need some more dressing, salt, or pepper.
