In this recipe, I’ll show you how to make this comforting vegan chilli ‘Con Carne bowl with nachos, vegan cheese, and guacamole. It’s super easy to make and can be adjusted with any toppings you like.
Cooking and Seasoning the Rice.
First, we’ll start cooking the rice because this takes the longest. You can cook the rice in a rice cooker or on the stove. I made white rice, but you can also use brown rice.
After the rice was cooked, I seasoned it with lime juice and cilantro. And while the rice was cooking I made the chilli ‘Con Carne, nachos, tomato salsa and guacamole.
Nacho’s with Vegan Cheese.
The nachos with vegan cheese are really easy to make. All you have to do is put as many nachos as you like on a tray, sprinkle them with vegan cheese and put them in the oven for 15-20 minutes at 190°C.
You can use your favourite vegan cheese. My favorite vegan cheese doesn’t melt as well as some brands. But I decided to pick flavor over look for this dish.
Making the Vegan Chilli
This vegan chilli is one of my favorite vegan staples. You can eat it with many different ingredients in many different dishes. You can find the detailed instructions for this vegan chilli in my 15 min vegan chilli recipe.
Guacamole
A good chilli bowl just isn’t the same without guacamole. For this bowl I made a simple guacamole with one ripe avocado, one garlic clove and stalt and pepper to taste.
Just mash the ripe avocado and mix it with the other ingredients.
Tomato Salsa
And last I also added a simple tomato salsa to give the bowl some extra flavor.
To make the tomato salsa dice 2 tomatoes and half an onion. Put the tomatoes and the onion in a bowl and mix with a little lime juice and salt and pepper to taste.
Making the Vegan Chilli Bowl.
When all the ingredients are ready you can put them all together to make a delicious bowl. I always put the rice on the bottom and add the other ingredients on top. But you are of course free to arrange the bowl in any way you like.
I also like vegan sour cream so I added a little on top as a garnish and for an extra creamy flavor.

1/2 Tbsp fresh or dried cilantro (to season the rice)
Juice of 1/4th lime (to season the rice)
Vegan tortilla chips (as much as you want)
Vegan cheese (as much as you want)
1/2 Red Onion (for the chilli)
1 Garlic Clove (for the chilli)
1/2 tsp Ground Cumin (for the chilli)
1/2 tsp Paprika powder (for the chilli)
200g Tofu (for the chilli)
200g Canned Beans (for the chilli)
400g Diced Tomatoes (for the chilli)
1/2 tsp ground cinnamon (for the chilli)
1/4 tsp chilli powder or your favourite hot sauce (for the chilli)
Salt and Pepper to taste (for the chilli)
2 diced tomatoes (for the tomato salsa)
1/2 onion (for the tomato salsa)
Juice of 1/4th lime (for the tomato salsa)
1 avocado (for the guacamole)
1 garlic clove (for the guacamole)
