Simple and Delicious

Draining the Zucchini
To get the fritters crispy it is very important to drain the water from the zucchini. You can use a cheese cloth or a clean dish cloth. Just put the grated Zucchini in the cloth and squeeze all the water from the zucchini in a bowl.
It is also very important to use cooked red lentils for this recipe. You can buy canned red lentils in the grocery store or buy uncooked red lentils and cook them at home. Not all Lentils are easy to cook but red lentils are very user friendly. Just cover the lentils with water and boil them for 5 minutes. Bake Golden Brown
The vegan Zucchini Lentil Fritters taste best when they are baked on both sides until they are golden brown. To enhance the texture you can also let the fritters rest a few minutes on a plate after you’ve baked them. This way the inside will firm up a little more without the risk of overcooking or burning the fritters.
